    a christmas favorite

    December 20, 2006

christmas time is always about family traditions. especially with the foods and treats that are served during the holidays. every year, we bring back the ones that have been around forever, like my mom’s cherry cheesecake recipe, and i always like to try out one or two new ones. a few years ago, i was given a recipe that has already become a christmas tradition in our household. i have been asked by several friends to share it, so here it is….

    butter almond crunch recipe

    1 1/2 c. mini chocolate chips
    1 3/4 c. chopped almonds
    1 1/2 c. butter
    1 3/4 c. sugar
    3 tbsp. corn syrup
    3 tbsp. water

spread chocolate chips in buttered 9×13 pan.
    toast almonds @ 350F for 7 minutes.
    cool and chop.
    melt butter in saucepan.
blend in sugar, corn syrup, and water.
cook over medium heat, stirring constantly to 300F on candy thermometer.
(bulb of thermometer should not rest on bottom of pan)
    remove from heat.
stir in almonds. (save about 1/2 c. to spread on top if desired)
immediately spread mixture evenly over chocolate chips.
score into 1 1/2 in. squares immediately.
cool completely before removing from pan.

    enjoy! :)

(this is where i would normally insert a picture but unfortunately we have eaten every last piece of it, so i can’t! maybe next time.) (lol!)

    our christmas open house

    December 17, 2006
well, another christmas open house is over for another year. it was a small crowd this year. only our family and closest friends. it was very nice and relaxed. i was able to socialize with everyone and really enjoyed myself. i didn’t even get out my camera to take pictures. {big gasp!} thanks to everyone for coming!

tyler wasn’t feeling too well today. do you think it could be from all the brownies he ate last night? maybe!

it was a lazy day. we played a few games and watched a movie. i love days like this. we don’t get enough of them.

my week of holidays is almost officially over. back to work tomorrow. {uggghhh!} i work 4 days, get friday off and then i work the 4 days over christmas. yes, i have to work christmas this year! {another uggghhh!} i can’t complain though. it’s the first one in 4 years that i have had to work. not bad for working in the hospital. you usually end up working every other year. i get the week between christmas and new years off, so i have that to look forward to.

the kids have these glasses from fireworksfx that make the lights on the tree look like this when you look through them. very cool!

and finally, we want to wish shonna a very happy birthday!
